Double Chocolate Pistachio Cookies


What I love most during Christmas time is creating something handmade and there’s nothing better than sweets! This is the first time that I create a ‘Recipe Gift Jar’, I know that it’s not such a novelty but I think that it always depends on the recipe and on the presentation. My recipe is Double Chocolate Pistachio Cookies with salt. For these cookies I used American Pistachio Growers, they are healthy and pair perfectly with chocolate!

Hey! Remember to be careful when you put the ingredients in the jar and use a funnel, it will be much better! Of course, only dry ingredients… then add eggs and butter!

  1. 3/4 cup whole wheat pastry flour
  2. 1/3 cup cocoa powder
  3. 1/2 tsp baking soda
  4. Sea salt, a pinch
  5. 1/4 cup butter, softened
  6. 1/2 cup sugar
  7. 1 egg
  8. 1 tsp vanilla extract
  9. 1/2 cup chocolate chips
  10. 1/3 cup pistachios, chopped (American Pistachio Growers)
  11. Salt flakes
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a bowl beat softened butter with a hand blender until creamy then add in sugar.
  3. Beat in the egg and vanilla extract.
  4. Combine flour, cocoa powder, baking soda and sea salt and stir with a wooden spoon until well combined. Fold in chocolate chips and pistachios (keep some pistachios apart).
  5. Roll into small balls (about 1.5 tbsp big) and place on a parchment lined cookie sheet.
  6. Spread chopped pistachios and salt flakes on cookies.
  7. Bake cookies for 10-12 minutes, then let cool for 5 minutes before transferring to a cooling rack.
