This year I’m totally into Christmas! I’m baking every other day and couldn’t wait to make these Eggnog Cupcakes. This is one of those treats that will make your Christmas… well, Christmas!

I’ve just discovered a frosting that totally changed my life. The name is Camy Cream and I have to thank ChiaraPassion for this recipe. Mascarpone, condensed milk and whipped cream will give you a super fast solution to all your problems.Eggnog Cupcake2

Ingredients
For the cupcakes
  1. 1 stick of butter
  2. 1/2 cup of sugar
  3. 2 eggs
  4. 5 tablespoons of eggnog liquor
  5. 1/2 teaspoon of cinnamon
  6. a pinch of nutmeg
  7. 1 cup of flour
  8. 1 teaspoon of baking powder
For the frosting
  1. 2 cups of mascarpone
  2. 1 cup of cream
  3. 3/4 cup of condensed milk
  4. 3 tablespoons of eggnog liquor
Directions
For the cupcakes
  1. Preheat oven to 350 F degrees. Line a cupcake tray with paper cups.
  2. Mix butter with sugar.
  3. Add eggs and the eggnog liquor.
  4. Sift flour, baking powder, nutmeg and cinnamon in the batter and mix until smooth.
  5. Bake for 15 minutes.
For the frosting
  1. Whip the cream with the eggnog liquor until compact. Set aside.
  2. Whisk mascarpone until smooth, add condensed milk.
  3. Combine the whipped cream with a spatula from bottom to top to the mixture.
  4. Decorate cupcakes using a piping bag and gold sprinkles.
